Chili con carne meaning "chili with meat" and commonly known in American English as simply "chili", is a spicy stew containing chili peppers, meat, and often tomatoes and beans.
Its an easy one pot meal that can be eaten by itself but also pairs well with rice, potatoes or any starchy side of choice.
I think its a nice one to add to your family menu, its also very forgiving since you can use any kind of ground meats (beef, turkey, Chicken etc) and a mix of veggies or none. Sometimes I make this with only meat and beans and other times I like to go all out like this one.
Ingredient
Ground meat- 1/2 kg
Oil- 2 Tbsp
Onions- 1 large bulb
Garlic- 3 cloves
Green and Red bell peppers- 1 large each
Corn- half cup
Peas- half cup
Black beans- 1 can
Kidney beans- 1 can
Tomato paste - 2 Tbsp
Diced tomatoes- 1 cup
Stock cubes- 2
Water- 2 cups
Seasonings (salt, black pepper, Cayenne, cumin and paprika) - 1tbsp each
Process
In some oil, cook the onions and garlic until they start to turn a little golden.
Add the ground meat, use a wooden spoon to break the meat into pieces.
Add salt, black pepper, cumin, paprika and cayenne pepper, stir and allows any juices released to evaporate.
Add the the Veggies including diced tomatoes and tomato paste- stir and allow to cook until softened.
Add the drained cans of beans, stock cubes and 2 cups of water.
Let it simmer on low heat for about 45 mins, check every 15 mins to stir or add water if it gets too thick. Taste for salt and adjust accordingly.
That is it, the chili gets better the next day since the flavors have had time to mingle, enjoy with a side of rice or potatoes or starch of choice.
