I blogged about my split pea curry and garlic naan which I made a wee while ago, this time I didn't have the patience to make the compound butter with garlic and coriander to slather on the naan to give it the buttered effect. Anyway this is a quick version, our focus here is the Butter Chicken though so lets keep things in focus.
My girl Ramya from Hyderabad would be proud of me, she put me on to many of the Indian dishes I had during my days in Florida. I think my favorite Indian dish is Rice Biryani and some nice Samosas.
Butter Chicken is easier than it sounds, though it uses quite a bit of ingredients the steps are only a few, my version is not the authentic one as you can tell, I'm just a Nigerian girl with wandering taste buds going by some research and what I remember this dish should taste like. As one with wandering taste buds my spice cabinet shows that, i have seasoning that cover is vast range of cuisines especially Asian, Mexican and SE Asian like this one.
Also bare in mind as a home cook a lot of things are eye balled and to taste, I do provide measurements as a guide but you can definitely play around to your taste.
Ingredients for Chicken Marinade
Chicken- 1kg
Yoghurt- 1/2 cup
Ginger/Garlic (Chopped)- 2TBSP
Salt- 1/2 TBsp
Cumin- 1Tbsp
Coriander- 1 tbsp
Tumeric- 1 TBsp
Paprika- 1 Tbsp
Chill powder- 1Tsp
Ingredients for Sauce
Onion- 2 small or 1 medium
Ginger/Garlic- 1/4 cup
Green Chilli (chopped)- 2TBsp
Tomato sauce- 1 can
Fresh Coriander (Chopped)-1Tbsp
Evaporated Milk- 1 can
Butter- 2TBsp
Salt- 1/2 TBsp
Cumin- 1Tbsp
Coriander- 1 tbsp
Tumeric- 1 TBsp
Chicken Bullion- 1 Cube
