There is fried rice and there is special fried rice!
The inspiration for this recipe came from my days in San Francisco; SF has a huge China Town and so I had the opportunity of experiencing a lot of delicious flavors. I remember strolling with friends after a long school day to buy some Special fried rice, packed full with beautiful flavors, loads of animal protein which I have tried to intricately replicate in this recipe, you will totally love it. I have used four animal proteins here; Chicken, Beef, Shrimp and Smokey Hotdog. These provided complexity in flavor and textures to those fried rice.
Few things to note:
- The chicken and beef should be thinly sliced, for ease of slicing you will need to put them in the freezer for minimum of 1 hour to help them firm up, it would be a lot easier to get thin slices.
- Use the green parts of the spring onion as garnish and the white parts as an aromatic vegetable.
- I use a frozen trio mix of corn, carrot and peas.

- Rice: Jasmine or Basmati; cooked and cooled
- Chicken Breast or Thighs; thinly sliced
- Beef; thinly sliced

- Smokey Sausage; diced

- Carrot; diced

- Garlic
- Onions
- Oil
- Soy sauce
- Oyster sauce
- Sesame Oil
- Black pepper
- Salt
- Onion powder
