If you need a last minute something something to take to a family part or gift a friend, this recipe is a hit! All my friends and family love this Chocolate cupcake and I’m equally happy because it’s a no fuse easy to follow recipe and the results are always perfect as long as you stick to the measurements.
I have a love hate relationship with baking, so I stick to fairly easy recipes. A huge tip with baking is to have the right measuring equipment and the right ingredients or equivalents and bake at the right temperature.
Preheat your oven to 350F or 180C
Ingredients
Flour - 3/4 cup
Cocoa powder-1/2 cup
Eggs- 2 large
Vegetable oil 1/3 cup
White sugar- 1/2 cup
Brown sugar- 1/2 cup
Baking powder- 3/4 tsp
Baking soda-1/2 tsp
Salt-1/4 tsp
Vanilla- 2 tsp
Milk- ½ cup
In a bowl mix all the dry ingredients; flour, cocoa powder, salt, baking powder and baking soda.
In another bowl mix together eggs, brown and white sugar, vanilla and milk, mix very well until everything is creamy and very well combined.
Add the dry ingredients to the wet ingredients in 2 batches, add the first half, mix until the flour is just combined, add the last half, mix gently until the flour just disappears and stop mixing, for a fluffy and moist cake you must not over mix.
Add the batter to your cupcake liners, fill them just half way, over filling the liners may lead to uncooked centers.
Bake in a pre-heated oven for 18 mins or until a tooth pick inserted comes out clean.
Please note that baking longer than required will leave the cupcakes dry, cool the cakes and get ready to frost. See frosting recipe here!
