How do you like to eat potatoes? I love them anyway, boiled, fried, baked, mashed etc
They pair well with all kinds of proteins from fried eggs to grilled chicken or steamed fish or even roast beef, it’s that really versatile starch.
A gratin is anything topped with a crust that browns up while it bakes, a gratin could be topped with bread crumbs, cheese, eggs or butter. So a potato gratin is made with thinly sliced potatoes with seasoned and baked with butter and milk. It is absolutely delicious, trust me when I say you would add this recipe to your weekly repertoire.
I had leeks on hand and let me just add that leeks are my new favorite thing, I’m literally looking for different ways to use leeks. They have the sweetness of onions without the sharp taste, subtle onion flavor in spring onions and the fragrance I cannot really describe, it’s a really delicious ingredient. I baked the potatoes and sauteed leeks together in some coconut milk topped with some cheese, OMG, the caramelized leeks mixed with the tender potatoes and the spicy creamy cheesy sauce. You have to try this.
Enough of all my stories, lets cook this easy and straight forward Potato and leek bake or you can call it, potato and leek gratin since we are topping these with some cheese.
INGREDIENTS
Potatoes
Leeks
Can of coconut milk
Garlic
Salt
Pepper
Stock cubes
Cheese
1. Peel and thinly slice the potatoes, leave them in the water to seat while you prepare other ingredients,
2. Clean and slice the leeks, saute them in some butter till just softened, season with salt and pepper
3. In a bowl, mix the raw potatoes with the sauteed Leeks, half can of coconut milk. Season with stock cubes and salt.
4. In a baking dish pour the mixture and top cheese, I used dry cheese because that what I had on hand. Cook in a 350 degree oven for 15 mins. Check to make sure nothing burns, add some coconut milk if your bake seems to be drying out until the potatoes are tender and the cheese topping is browned.
5. Serve this beside some protein and Enjoy.
