This tower of waffles were absolutely delicious and best of all homemade, so I know exactly whats in it, I can control the sugar content and everything else, as a matter of fact, these had no sugar! I had been wishing for a waffle iron for a while but the electric ones seemed to bulky and commercial so I searched online and I found the cast iron ones that go directly on your cooker flame, they are cute, portable and easy to use, literally the best thing since sliced bread!
INGREDIENTS
Flour- 1 cup
Mashed sweet potato- 1 cup
Baking powder- 1 1/2 Tbsp
Eggs- 4
Plain yogurt- 1/2 cup
Salt- 1/2 tsp
Honey- 2 Tbsp
Melted butter- 1/2 cup
METHOD
Boil and mash sweet potato, make sure you mash while hot its easy even with a fork then measure out 1 cup.
Separate the 3 egg whites in a clean bowl, this egg whites will be beaten till frothy- this step is optional, you can just add all the eggs when mixing the wet ingredients but I always beat the whites separately and incorporate into the batter to make it extra fluffy.
For the dry ingredients
In a bowl sieve flour, baking powder and pinch of salt, mix well to combine and set aside.
For wet ingredients
In a blender add mashed sweet potato, yogurt, melted butter, honey, 4 egg yolks and 1 egg white. Blend till smooth and pour in a large bowl.
Add the dry to the wet, mix until the dry ingredients just disappear, don't over mix.
Now fold in half of the egg whites in the batter, when the white are well combined, fold in the remaining half carefully so as not to loose the air incorporated in the egg whites.
To cook the waffles
Heat up the iron on low flame, once hot, brush on some melted butter or spray some oil, add half cup of batter to each of the two sections of the iron, cover and cook on low heat, 2 mins per side. Make sure to move the iron around every min.
Serve with syrup, chocolate spread, berries or dried fruit!
This was really delicious, I'll be trying a lot more waffle combinations, with bananas, cook mashed carrot. Etc.
